Gluten free puff pastry with salmon and spinach

Today I had a totally fast and uncomplicated lunch: Gluten free puff pastry with salmon and spinach. And it tasted just as good as it sounds. 

What you need for it: 

1 roll of Schär puff pastry

at least two hands full of fresh organic spinach

wild salmon fillets (as many as you like, I would recommend one fillet per person)

half a lemon

1 egg yolk (keep the egg white and use it for scrambled eggs the next day)

salt, pepper, nutmeg

And it’s that simple:

  1. Preheat the oven to 180 degrees with top/bottom heat and in the meantime roll out the puff pastry on a baking tray.
  2. Score the dough lengthwise on both sides so that you can fold the sides over the salmon later.
  3. Then place the spinach and salmon fillets in the middle, season and cover with lemon slices.
  4. Fold the dough over and put in the oven for 25 minutes.

The time is estimated and depends on your oven, you should only check from time to time that the gluten free puff pastry does not get too dark.
